Tiramisu


Have you ever wanted to learn how to make traditional Italian Tiramisu. So... I will tell you.... The first dessert that comes on everyone's mind when hearing about Italy is the Tiramisu. There are many variations of this dessert. I am happy that I am in the country of origin of this dessert and I have the opportunity to prepare it. In spite of the fact that in the restaurant where I work I prepare all elements for the gourmet desserts, the Tiramisu became my favourite recipe. The recipe that the pastry chef uses is very special because it is given to him by his grandmother. It is not so complicated but it is necessary to follow the steps in order to achieve the desired result. The most important part of the dessert is the cream. It consists of three parts. The first ingredient that makes the real taste of Tiramisu is the Mascarpone cheese. It should be mixed until it is nice and soft. The next step is mixing whole eggs, egg yolks and sugar. We do this by hand according to the traditional method. The mixture should be fluffy and it changes its color to pale yellow. The third component of the cream are the egg whites whisked with white sugar. When the three components are ready it is time to mix them. The mixture of eggs and egg yolks is added in 2 - 3 times to the Mascarpone cheese. It is important to mix very well until the ingredients are incorporated and there are no pieces of cheese inside. When this is achieved, we add this mixture little by little to the egg whites. Here it is important to mix slowly and carefully. The cream should look like mousse, it is very smooth and light. When the cream is ready it is time for the biscuits. Various types of biscuits can be used. We make the dessert with thin slices of pan di spagna. They should be dipped in mixture of coffee and sugar syrop and after that to be put on paper in order the excess coffee to be removed. And when everything is ready it is time to assemble the dessert. We make it in individual portions and use small bowls. We start with layer of cream then biscuits, again cream , one more layer of biscuits and finish with cream. On the top we sprinkle cocoa powder, but not too much because it is a bit bitter. And our Tiramisu is ready. I hope you will feel the magic of Italy by preparing this typical dessert.
