The nature in the pastry
I have already told you that all the desserts that are included in the menu are strongly connected with the nature. Not only the plating illustrates landscapes of the beautiful Tuscan nature, but also many of the ingredients are being delivered from the Borgo's organic gardens. Lots of fruits are grown there and in the summer season we use them frequently, because they are lighter and fresh. They are used for decorating tarts, fillings of cakes and of course in the gourmet desserts. The most used are the berries and especially the raspberries. They are the main ingredient of one of the desserts in Meo Modo.
We use them fresh, as well as in mousse with white chocolate, as powder and we also make granita from them. One simple product , but with many applications just in one dessert. Another very frequently used fruit are strawberries because take part in the Strawberry and pepper dessert. They are also included in one of the small pastries. But we try to use as much as we can from each plant - not only the edible parts, but also some non edible - different leaves for decoration and infusions. A clear example of this are the strawberry leaves and olive leaves that we take fresh before every service.
We also some of the vegetables. The red pepper grown in Borgo's is being transformed into salsa and crumble for the new dessert, for which we make granita with fresh basil. We make different infusions - from rosemary, lavander and raspberry leaves. Lavender is also in the filling of some chocolates and takes part in the most beautiful dessert in the menu - Fiori e foglie. And of course flowers and leaves in various colours and forms come fresh from the garden. They are a nice accent in every dessert, cake or tart.
